Potato Tacos!

When we made tacos the other night, we had too much going on in our little kitchen to try another recipe. We ended up making too much food anyway but, since then, I’ve been craving potato tacos. I’m a little surprised at myself. I think I have only had them once or twice and I’m actually not really a fan of potato. Yet here we are and I’m so excited!!

I had such a clear idea of what the recipes were going to say when I looked them up this morning. I figured the potato was mashed and fried and then put into a tortilla. Apparently I was way off. All of the recipes I looked at involve putting the mashed potato into the tortilla, securing the tortilla with a toothpick and frying it all together. I chose to go a different way.

Potato Taco Filling


2 tablespoons vegetable oil
1 tablespoon olive oil
4 russet potatoes, cut into ≈½ inch cubes
¼ red onion, chopped
5 cloves of garlic, finely chopped
5 stalks cilantro (just leaves), torn or chopped coarsely
1 jalapeno, diced
1 tablespoon hot sauce
1 teaspoon cayenne
½ teaspoon cumin
2 tablespoons shredded cheddar cheese
1 tablespoon crumbled cotija cheese
salt & pepper to taste

Add the oil to a pan over medium heat and let it heat up a bit before adding the cubed potatoes. Sprinkle them lightly with some salt, pepper, hot sauce and cayenne (however much you want, separate from the ingredients listed above) and then cover the pan. Let them cook, stirring every few minutes, for ten to fifteen minutes.

Once they’re tender and lightly browned add in all the other ingredients aside from the cheeses, lower the heat and mash it all together. Keep the heat on for another five or so minutes or until they look so good you just can’t wait anymore. Turn off the heat and sprinkle the cheeses over the top. Stir it all up together one final time and you’re all set!

As delicious as they are in tacos, I bet they would be just as good with a little fresh avocado or maybe some chicken or beans… Dealer’s choice!

 

Here’s an extra little tidbit for ya… When I took this picture of the potatoes, I noticed a tiny cotija cheese heart right in the middle of the pan. Can you see it? It happens all the time when I’m cooking. The fried chicken I made the other night is another perfect example!
